Like the Navy and LPI, the LSF uses the standard Liberty LF and HF. It just doesn't do so outside the storyline, since there would be no purpose to having a bunch of spooks hanging around if they didn't...well, snoop around undetected.
Juni's defender is obviously a customized ship, not representative of the standard LSF issue defender- you get to see those in the first mission when you take down the pirate base(the defenders armed with torps...Delta wing, I think?), and later when King flies one in mission 4....even later, when some of the loyal ex-LSF agents fly them around Buffalo.
