I only use cockpit view, I played on external view for about 5 mins and switced it over and have never turned back, I think the game looks better from that view and I find the external view is really annoying in a light fighter cause it kinda speeds across the screen and gets confusing, and the bigger ships block your view even more.
When im cruising around I will normally switch to turret view to have a look around

I started out using cockpit view, as I wanted the realism and simulation feel. As I stuck with freighters for the most part, I kept having use the external view provided by turret mode. Since you can't do something like, oh, twist your neck to look out the window, I gave up and switched to external view altogether. Occassionally I'd switch back just to see if there was anything interesting about the cockpit of a new ship. There isn't.
Yes, your observations are correct. It's a bit harder to shoot ships in the cockpit view, because the viewpoint is farther forward and thus "closer" to the enemy ships, meaning that the angular velocity as projected into the 2D viewpoint of enemy ships is higher. In English, they appear to move faster because they're closer to your viewpoint so it's harder to target them.
It totally depends
I find that racing is easier in cockpit view. You can really hit those jump gates at near-0 meters when your in the cockpit. If i'm trying to just hurry through a system I will fly in cockpit view. It's also good for cruising through mine fields and gas fields etc, as there is (IMO) a better feel for where your ship is.
However, for dueling, I prefer external view due to the wider field of view. You get more peripherally than you do in the cockpit, due to the viewpoint being further back. This means you can hit people occasionally with that rear turret, and means that you have an idea which way they are turning when they pass you. (if they turn)
One exception to the above however: For fighters that have guns above, below and to the sides of the cockpit, I find it occasionally easier to aim due to the tracers creating a big fat crosshair effect. The little blue recticle is occasionally difficult to see, and this converging tracer effect can really help. If I had an eagle with Tizonas on the wings I would use external mode, since the tizonas have no tracers and wouldn't help aiming. However, if I had sunblasts mounted on the wingtips, I would use cockpit mode, and enjoy knowing exactly where my recticle was at all times.

I agree with Spaully. With most of the weapons, and their location, anytime you fire, you lose complete visibility. It's hard to keep track of what's going on with all the flashing lights. That's another reason I switched to the external view. It takes you out of the line of fire.
I also agree that cockpit mode can be better in asteroid fields, although I would only use it outside of combat. If you're in 3rd person mode, your effectively trailing behind the ship, which gives you less reaction time when an asteroid materializes in your flight path. This is doubly true if you're using one of the mods that allow high speed travel, like the Hyperdrive in the Rebalance mod.
