I fly one of four ships:
1. Hammerhead- Got bored of the class 10s, moved down. Combat's just not that fun when you enter it already knowing the outcome.
2. Banshee- Light, mean, decent firepower, durable. A welcome change in a universe filled with class 10 propaganda.
3. Patriot- I'm trying to put a little more challenge into the game by battling high-level foes in the little Patriot- it's more fun than you would expect, even if it is hard as hell. Eventually I hope to get to the point where I could take it online.
4. Dromedary- Because it's just so fun to play Smuggler...
Reaper: $200,000,000.
Rockets: $100,000
The look on that pilot's face when you launch a full pod of screamers up his tailpipe: priceless

I'm torn between the Eagle (In Bretonian colours, natch!) and the Dromedary.
The Eagle simple because I really don't quite like the look (or the colour scheme at least) of the Corsair ships. And as I've yet been able to seperate their textures from the Kusari ones, I can't edit it.
But, the Eagle is cool.
I like the Dromedary more though, because it just looks great, and there's something *insanely* fun about mounting a bunch of flashpoint turrets to it and having them blaze behind you at hostile vessels while gunning the engines to full in a straight line. B-17 Style.
Now if only someone would mount the Eagle wings onto the Dromedary...

I've hardly flown 'em all, but...
[light
Patriot - amazing little ship. With Adv. Scorpions it owns Liberty space.
Piranha - I was expecting more maneuverability from this ship like its big bros...
Dagger - Same as above, but a forward firing turret is nice, and it looks great.
Drake - Great little ship, powerful and fast, too bad I hate its looks.
Hawk - Decent power/speed balance. I finished SP in one of these.
[heavy
Defender - Meh.
Crusader - See above.
Dragon - Like the drake... I don't like Kusari ships. to much bolted on nonsense.
Barracuda - Yeah. 6 forward mounts, and it can move.
Anubis - I like the 'Cuda better, but the extra armor can be helpful.
[very heavy
Hammerhead - looks/flies good. Needs some lvl 10 mounts...
Eagle - Yeah baby!
Sabre - I'll take maneuverability over the forward firing turret and extra armor.
Titan - Put 6 turret mounts on this pig... it's a gunship, not a fighter. :p
[freighters
Experience too limited. Not really my kind of play.
Ever get the feeling... you're standing on plastic?

Off topic? It's called a comparison?
B-17s are (or were) Heavy Bombers. Sluggish, took a beating, and had lots of turrets that shot up stuff while the plane flew in a straight line.
Dromedarys are Heavy Freighters. Sluggish, take a beating, and have lots of turrets that shoot up stuff while the ship flies in a straight line.
See: Escape from Death Star scene, Star Wars. Same principle.

Love the Drake.
Did the entire SP in light fighters, except the very final mission. Just not quite enough firepower, needed a torp, so got the anubis. Gonna try again and stick with the drake.
Love the B-Wing from Porsche's Star wars pack though.
Just my $0.02, but it could just be the cardamine talking.

I find all the VHFs to be balanced. People who scream about the eagle being the best havent fought a pilot capable of an engine kill or even an elementary knowledge of how to use turrets. I see people all the time justifying the sabre as the best due to forward facing turret, but if you apply yourself for one good night of Freelancer, that pretty much becomes irrelevent, because its not hard to use a rear facing turret effectively.
So I guess it comes as no surprise my favorite is the Titan. it is the Heavy Tank of Sirius, I just love all that extra armor, because I explore more than anything else and its niec to have more buffer when you are in radiation. also against the AI all it takes is some class 9+ weapons and your turn rate is irrelevent. they are easily beaten.
the titan only closely edges out the sabre for me, but thats due to my absolute adoration of the Outcasts (always the first to green, best illegal cargo, generally safe and non confrontational runs from Omicron Alpha to Liberty, and the fact that if I was Trent, I would willfully get addicted to Cardimine for the extended life span, the narcotic aspect being a nice side effect =D). the Saber is a no brainer ship and is great fun to go hunting Corsair Titans in. and for the record, i always buy it from Omicron Alpha, because the journey there is alot of fun and quite beautiful, while vogtland is rather bland.
non VHFs I go with the Dagger. simply the most logical of all the ship designs in freelancer and definitely the most beautiful. not to mention the fact that a dagger with class 2 xeno scorpions (dont even need the turret) is overpowered for Liberty (yet can be bought in starting system) is evenly matched for Bretonia, and can still survive in Kusari assuming a level 4 shield and some flight ability. no other ship gets that kind of "bang for buck". too bad the Chugoku system is so incredibly useful, because I tend to have to "thank" the blood dragons for the use of their system by buying the hawk each time i stop by.
Dromedary is cool because it is the only ship that actually has use after you can afford to rig it with beyond-spec stuff. it has the largest cargo hold of any ship in the game, is relatively difficult to get a hold of - that whole sense of accomplishment thing for making everyone im magellan your friend - and is the only ship you tend to see online other than Eagles...
and finally, the Hammerhead recieves honorable mention. it is quite satisfying to blow up the class 10 VHFs with only class 9 guns, and a loadout of Skyblasts is just downright scary. I beleive it to be the equal of the eagle, and flown by the right person can hold its own versus a saber, and against AI/most players rips Titans to shreds.
I play this game excessively, and dont get out much, sorry for the novel =P
(6 times through the game, and now flown every single ship)
