Why bother? For a more dynamic look! It adds to the eye candy if nothing else. Personally I find it to be a bit boring (and unsettling actually) to see everything in perfect stasis around a planet. More things that can be modeled with different z-axis coordinates: minable comets with eccentric orbits, and some planets with eccentric orbits would be nice too.
At any rate, my key point is that it does NOT take 10GB to put objects at different Z-axis levels.
Remember Milo, one of our regular forum visitors who was developing a 3D Space sim? Ask him. It does NOT take 10GB to give a space sim a 3D flight engine (and indeed, FL already has one).
