Capital Ships

I've just finished the space race in the SP mission. For both SP and MP, do you really ever have capital ships? If so, how do you manage turrets and such?

You get no capital ships in an unmodded game. In some mods like the "88flak:mythic drive" series you can buy them, just go into turret mode for the turrets.
