More debris...??? God, I usually take them out so I can have a good fight at higher speeds without hitting a rock!
However, depending on the type of junk you like to run into, you can increase it in a couple of ways.
Find the system with the stuff you like to rub up against. Go to the ini file of that system, decrypt it with bini.exe into a text file (save the original as xxx_ini.old, xxx being whatever the name of the system really is) and look for a header with the words "asteroid field" in it like this from Omega 5 (Bw02)

Then go farther down and look for the actual information for this field:

Note the "size" parameter in the above section. Now if the section you want to increase in size is smaller, make it bigger! Just don't make it bigger than the system you are in or crashola... So go slow and increase by increments until you are happy with the result and the game dosen't crash when you enter the system. You may also move your larger field to the center of the system so you can cover the whole thing. Look in systems that already have wall to wall asteroids for placement numbers, but 0, 0, 0 is the absolute center of course, so the above example of 90000, 90000, 90000 goes out 45000 units in all directions from the center.
You can also increase the number of particles to make it denser if you so desire. Then simply save the file using the "all files" instead of just "txt files" feature of notepad or wordpad or whatever you are using to look at the file after decryption, and your good to go, or not go, that is, with all the rocks to run into.
