What exactly does that kind of zone do? I see them all the time; what is the difference between that and pop_ambient?

They're the area where the bar-room missions are played out.

Also, "Open" type vignette things are the type where you can get missions to destroy bases and defences as well, wheras "Field" is where you fight only against ships..
