Has anyone ever

Made a whole universe as an addon or TC that includes planets on the Z axis... i think thats it...
and/or trade lanes going diagonally?

Yes, Chips added the Florida system with a full 3-dimensional use of tradelanes and space. In fact if you look at the map, you see a tradelane that looks like it is supposedly going through a Green Sun, but it turns out the sun is below the tradelane.
