All your weapons (except for missles/torpedoes) are fired by default with the RMB unless you de-selected them. While in space, look in the bottom-right window (press Backspace to open/close it if it isn't there) and see if all your regular weapons are highlighted. If not, click on their names to select/deselct them... Note that you shouldn't select any missles like this, since you'll basically be wasting a missle every time you shoot.

if the turrets can not fire in the direction you are aiming they will not fire. If you use "turret" mode and spin around they should fire behind and to the sides (however, your front turrets may not fire then)

I use my rear turret when mining... since using all turrets are wasteful... (yes... shooting rocks with 4 lvl 10 cannons)

I just hit 'v' to get a rear view and fire away with my turret. This is where it pays to have a high damage turret weapon.

Okay but why didn't they make it so that your weapons systems could have your turret track the close ship to your rear and fire on it automatically? Would you have to surrentder control of your ship to do it the other way.

My impression on the enemy with turrets is that they can manuever and shoot there turrets. Was this a limitation?

Yes, they certainly seem to be able to maneuver and fire their rear turrets at the same time. In fact, I'm certain now and then that on occasion their response to incurring damage has been "I can't reach my gunner," implying that they have manned, autonomous turrets. That'd be nice to have on my freighter, hired gunners. But I guess it's powerful enough as it is.

Hell I'd op for a nice R2 unit to work my turret if I could. They should have made a tracking and fire control system for your turrets. Maybe not an all out accurate one but just one to use as point defense.
