Technically speaking the Startracker and Defender are pilotable ships.

I think the ships you can buy are the Startracker, the Defender, the Justice (I think that is the name), and Rhino, the Dagger, and the Bloodhound. The only ones you can buy are the Justice and the Rhino. Oh, well.

You can get some of the lv 3 weapons though...

There are 3 ships, btw. I am satisfied with the demo and I don't care about the other ships, this is a demo, it's supposed to be short, still FL demo is bigger than some.
