as far as i know it should target spesiffic guns on the enemy ship, meaning the enemy wont be able to use them when they are blown to pieces. although i find that it is nearly imposible to do this in combat, you'r probably better of just blasting them

The slight autoaiming you may already have noticed (for example when you shoot at mineable debris) focusses a bit more on the selected subsystem, improving the likeliness to seriously damage or destroy that part.

and its usefull to locate turrets against bigger targets.
aswell if you use torps and missiles it works wonders ^_^

Remember why expencive fighters with weapons mounted on wings are not reccomended ?
You can blast off enemy's guns and other parts. For example you can blow off a missile launcher (the're very weak) or a truster. Since in the demo all the pilots have basic ships and they're rookies you can as well blow the off.
Can you shoot off a shield?

BTW, you don't have to doubleclick, you can just press the botton near "show list" which looks like a fighter between [ quotes.
