How do you get out of a minefield? Don't go into one. It's as simple as that.

fly slowly (non-cruise), look for large gaps betwen mines, and be ready to use shield batteries

Minefields suck big time, Especially when enemies show up, I never survive that

How come those mines don't disapear after they blow up?

I don't know why you guys turn cruise off while flying through mine or asteroid fields. I just turn cockpit view, enable mouse steering and fire away the cruise engines. Without any speed mods of course. It's doable at 300, but not at 600. It also depends on you vessel. I can do it easily in my Eagle, but I stay away from mine fields when I'm piloting the Humpback.
