That's really a question to ask yourself, when do you feel you have outlived the game? Depends on what you want out of it. You could try finding every wreck in the game, mapping out every anomaly in every sector. Trying to find the best trade route. Try taking the lightest ship you can as deep into enemy territory as you can.(try surviving in unkown with a defender or somesuch). Try some of the mods out there, not a mod person myself, but think that would give you some variety.

Just a few ideas, try setting a goal that you know would challenge yourself, then see how to pull it off.

Also, you can go total evil - start hitting the transports/ escorts.....
- try smuggling - its hard to get cardamine into NY
- go online with another server and start a new guy....now you know where everything is...
- mods (like the other reply said)
- or try and do some mods yourself!

Ya could go freighter pilot and try some difficult but lucrative trade runs either SP or MP....
Ya could try mining....
Ya could try helping other folks on MP and enjoy "mentoring"
Ya could find a good PvP site and see if there is a difference when fighting humans vs AI driven ships
