If you get a ship with a huge cargo hold, like the Dromedary, Transport, etc., you can in fact shift high quantities of the stuff. Only one item deteriorates at a time. In MP, just as one is about to kick the bucket, if you "Select New Character" then select the one you were just using, that item's health is fully restored. It works, I've tried it

I know a great trade route with a drom that includes lux. food and gets about $600 000 for a trip from Colorado to Leeds and back (fairly short time, including perish rate).
