Uhhh, slap me if Im wrong but isnt CET Central European Time, which is GMT +1 ?

GMT means:

Greenwich Main Time

it's the name for the time measurement line that runs over greenwich
On military terms it is reffered to as zulu.

to the east there is increment of one hour per timezone and to the west there is a decrement of one hour per timezone.

-5 GMT just means 5 timezones west of the greenwich line

(and CET means Central Eastern Time and it's about running over New York (correct me plz if I'm wrong))
