For Sci-fi I like On Basilisk Station, and Echos of Honor by David Weber
For Fantasy I like Homeland by R.A. Salvatore and the Riftwar saga by Raymond Fiest.

Out of the literally tens of thousands of books I have read (not a joke or exaggeration) I have to say Pyramid Scheme by Eric Flint. It's the funniest. Period. An online copy can be downloaded at the Baen Free Library (just google it) in HTML, Rich Text and a couple other formats. It's worth the time to read it. The explanation for the extinction of dragons will have you rolling. (Even with dragons it is still Sci-Fi, don't worry.)

The best sci-fi I have read was Battlefield Earth by author L. Ron Hubbard . The movie NEVER got close to the book.
