Is anyone out there from Louisiana who can bear witness for me? Well, I guess the idea of deep fat fried turkey has spread throughout the southeastern US but I had it once, in Louisiana and it was, much to my suprise deeeeeeelicious! Roast turkey is good too. The kicker is that many people fry up the bird whole!

In NYC, there are Thanksgiving suppers and then there are Italian-American Thanksgiving suppers.
Of course they have a beautifully roasted bird (only hens, thank you) along with the stuffing, the mashed potatos, candied yams string beans or broccoli. But usually ALSO served roasted fresh ham, a baked whole fish, usually a snapper, baked lasagna, sautee'd spinache with white beans or or escarole aglia olio or both, spaghettini or some other thin linguini a la marinara.
The table groans under the weight. People pretty much eat in sessions for the better part of the afternoon and evening.
And then, of course, the desserts come out.... in addition to pies, pumpkin pie of course is included, all the wonderful Italian pastries. Then the "black" coffee (espresso) with a bottle of Anisette for the table to be used in place of sugar for the coffee. And, finally, for those men still standing, some grappa.
I have had the great fortune of sitting through two of these eating orgies with great friends of mine in Brooklyn and all I can say is no one knows how to eat as well as these folks!
