nitrate is a substance what we call salpetre it's a major component of gunpowder
it's periodical determination is NH3+ (an Ion) it's deficiency is due to lack of other substances that are present in cow dung heck it's just pur nitrate it's not good for the plant (same for magnesium(Mg+) it's to pure) (...............................)

Biggest prob with nitrate based ferts is that overuse causes the ferts to leach into the water table. In England we had trouble with the Norfolk Broads, the farmers overused and the ferts entered the water causing the algy to grow at an exponential rate. They in turn used up all of the oxygen in the water and blanketed the top of the broads preventing sunlight reaching the bottom. This in turn meant that plants underneath died from lack of sunlight and rotted and fish died through lack of oxygen. This led to stretches of the broads being devoid of life for a while.
Another prob is the ferts could get into drinking water, especially for say farm animals that might drink from rivers/brooks etc. As the fert is a poison to animals in general it builds up in the farm animals and could but not always kill them. We in turn eat the animals and thus end up eating are own fertilizer which is just damn right rude. Not certain as to the effects but for say pregnant women it possibly (And I am not sure) cause problems during berth etc.
If I were you I would look at say 'Nitrate poisoning' on the web and anything associated with leaching. Play with the words and google should get it for you.
Hope this helps
