You should expect the game to go gold approximatly a month prior to the announced release dates, which should be something like early next month...

You can see games going gold up to about 2 weeks before release. That's about how long it takes to get the CDs pressed and boxed up, and shipped out to retailers.

Sar: MS is a tad slower than that...

how long from going gold to being on store shelves? a month?

Usually it's a month after going gold. I have seen a few games do it in as little as 1.5 - 2 weeks, but usually it's a month. Though you may be waiting even longer if you live outside the US, which im sorry to say that I do. I'm pretty sure if FL is released in the States on the 6th of March I probably won't see it in Australia till at least the 15th. Still it's not that far off now!
