Make sure the package in the goods.ini files doesn't have anything that might not even be there. Engines, powerplants, I wouldn't worry much about lights since they wouldn't show up if they were missing, but engine, powerplants are some of the key factors to a crash.
If your sure the engine is there, check the engine file to make sure it isn't missing from there.
EDIT : on another note were you able to see the ship, or does it crash when you enter the shipdealer?

Then it could either be a problem with the shiparch. Make sure you don't have any mistakes made in the code. Or the model you are using is bad.
I am sure a program like FLspit might catch the problem. Should find that program here on the site and use it while running FL and read the error report.

Get your hands on the FLScan and run it. Chances are it will find out what you might have missed.
1. Make sure you ship is listed (declared) in goods.ini, shiparch.ini, loadouts.ini, and marketships.ini.
2. Make sure the ship has its own unique ids name and ids info numbers. (If you used the ship scripter, this would have already been done)

From what I've just read into your post, I think you missed a declaration somewhere.
